About Us
Waltking Associates was founded in April 2000 by distinguished food scientist Arthur E. Waltking. The
firm is located just outside New York City in northern New Jersey.
After receiving his degree in chemistry from Lehigh University in 1959, Art Waltking immediately began his career with Best Foods Division of Corn Products Company, and spent 41 years in various technical and
management positions at the Bestfoods Research Center. When he
retired, his title was Principal Materials Scientist. He was instrumental in developing a Materials Science Function at Bestfoods, which included the evaluation of the physical properties of foods utilizing the following diciplines: Microscopy; Thermal Analysis;
Rheology; Texture; Particle Size and Powder Analysis. He has one
patent, more than 20 published papers and poster abstracts and was the recipient of the following awards:
- In 1971, he received the Golden Peanut Award from the National Peanut Council for his publications
and method for the rapid determination of Aflatoxins. Up to that time, in the eleven years that the
award had been given, he was the first from industry to be a recipient.
- In 1993 he was made a Fellow of AOAC International (Association of Official Analytical Chemists),
which is presented to a select group of members each year "in recognition of outstanding professional
contributions toward the development of analytical methods which are important to agriculture and
public health."
- In 1995 he received the AOCS (American Oil Chemists Society) Award of Merit for some of the same
activities and numerous AOCS methods developed during his tenure as Chairman of the Hydrogenated Oils,
Biochemical Methods, Aflatoxin, Mycotoxin, Flavor Nomenclature and Physical Methods Committees.
For 9 years he was one of three AOCS representatives on the Joint (AOAC, AOCS, AACC, IUPAC) Committee
on Mycotoxins, aiding in the coordination of the research efforts to detect and eliminate these mold
metabolites from food products. He was appointed for 12 years by the NRC as the U.S.A. Representative
to the IUPAC Commission on Oils, Fats and Derivatives. He was also the AOAC liaison to the AOCS, the
AOAC Associate Referee for Oxidized Oils and a committee member of the Foods I Committee of the AOAC.
In addition he was co-founder and Past President of the AOAC, N.Y.-N.J. Regional Section.
